“Bouchon Vaudois” is only produced by professionals and all stages are carried out by hand
The production of “Bouchons Vaudois” has undergone a few changes since the product’s inception, despite its codification. However, these changes are minimal and their main purpose is to save a little time in the fabrication process.
This is because it is done exclusively by hand, from start to finish, and therefore takes a relatively long time. When the product was first launched, raw materials accounted for the bulk of costs, whereas today it’s labour and working time.
For example, in the original recipe, each “Bouchon” is filled with a whole caramelised almond, whereas today, crushed and caramelised almonds are mixed into the filling.
This change saves a little time in production, without changing the nature of the product.
